Napa!


A couple weekends ago my friend 
Christine and I had a girls' weekend in Napa.
We had such a great time!

It was just the right amount of relaxing,
exercising, eating, and drinking!

We stayed at a place we found on Airbnb.com.  The
location was perfect and our hosts were wonderful!  
I would definitely recommend it and hope to have a chance to stay again!














 Bike riding was our mode of transportation
from winery to winery!  It was safe and economical!

Surprise visit to see the girls!

This weekend I took a little surprise
trip to visit my sister and her family!  
Geoff was in on it and we came up with a great plan!

My flight was scheduled to arrive Thursday
night at 10:45pm.  So, Geoff told Kate he was
going to meet some friends for drinks after the 
girls went to bed.  Instead, when he left the house
he actually went to movies to kill time until
my plane arrived (too bad I was 2 hours late!).

Kate was asleep on couch when we arrived
at their house.  Geoff woke her up and said, 
"look who I brought home" and her eyes got so
big!  She was so excited and jumped up and down
and gave me the longest hug ever!

The three of us stayed up until 3am catching up.
If you know us well, you know 3am is NOT typical at all.

Friday morning the surprise was revealed 
to Annie and Caroline (Geoff had told Lauren
Thursday night when he put her bed that I would 
be there in the morning, but she couldn't
tell mommy because it was a surprise and she didn't).
Good job, Lauren, for keeping it a surprise!

Friday we went to Lake Geneva and checked into 
Timber Ridge Lodge & Water Park.  I had never been
to an indoor water park before, but we had a blast!!  The girls just 
loved it!!!!  It was so much fun to swim together, play games, and hang out.

then we hit the lazy river!


Caroline had the right idea while 
cruising along the river...she fell asleep in the tube!!!!

Saturday morning we packed up and headed back home.
Geoff and I took Annie to Little Diggers at the Botantic Gardens 
while Lauren had a friend over to play.  

Annie looked so cute using the magnifying glass
to check out the crickets!

She planted Mexican Heather to bring home and grow.


And, a big "cheese" when she was 
watering rhubarb (my favorite) in the garden.

Lauren and Annie put on a show for us last night.
They were dancing and singing like crazy!

Lauren and I had a sleep over
in her room last night.  It was so much fun!
We can't wait for Annie and Caroline to be old enough to join us.

Unfortunately, Sunday morning came quickly
and before I knew it, I was back to ORD for my flight back to CA.

Mom & Dad's visit!

My parents came out to visit for 
Easter.  We had a great time!

Friday we started off PB & J sandwiches for lunch
and went to Good Friday Mass at church.  We hung out in the
afternoon and rode our bikes up to The Porch for dinner and to 
watch the NCAA basketball games.  

Saturday morning we went for a bike ride and got donuts!
Then we took off for Simi Valley and the Reagan Library.  We were
all very impressed.  The location has amazing views!  Walking
thru Air Force One was my favorite part. 

I might have tried my hand at the teleprompter...


We colored Easter eggs and played Euchre that evening.



Sunday we went to church, watched more basketball
(where Jon clinched winning the family bracket), and had a delicious meal
before ending the holiday with a beach campfire!

toured the harbor with a picnic lunch.

Monday night we drove up the PCH to Terranea 
and had dinner at Nelson's while watching the sun set.

Clearly it was quite windy...my hair is out of control!

Baileys Irish Cream Cookies

I also made these cookies for St. Patrick's Day!  

It's kind of hard to tell in my picture, but it's
two cookies sandwiched together with filling....
Baileys Irish Cream filling!  Sign me up!

Ingredients

Baileys Cookie Dough
8 ounces unsalted butter, room temp
1 1/2 cups sugar
1 egg
1 egg yolk
1 teaspoon vanilla extract
4 cups AP flour
1 tablespoon baking powder
1/2 teaspoon salt
1/2 cup Baileys (woohoo!)

Baileys Irish Cream Filling (I actually cut this recipe in half and didn't fill all of the cookies)
8 ounces unsalted butter, room temp
2 & 1/2 cups powdered sugar
6T. Baileys
2t. Trablit (I used vanilla coffee grounds instead & increased the amount...I just taste tested it for the amount)

Melted Chocolate

Instructions

Baileys Cookies
Cream butter and sugar till light and fluffy
Add egg and egg yolk
Mix in vanilla extract
Alternate adding in dries with Baileys till combined
Wrap cookie dough in plastic wrap and refrigerate a few hours to over night
Roll out dough & cut out cookies using a shamrock cookie cutter (I put sprinkles on some of the cookies before I baked them)

Bake at 350 degrees for 12-13 minutes rotating once halfway through.  Start checking them after 10 minutes. As soon as they get a little blonde on the edges, they’re done

Baileys Filling
Cream butter and sugar, adding a little sugar at a time so you don't have a sugar shower.  Add extract/coffee and Baileys.  Fill cooled cookies.  And drizzle with melted chocolate.

White Chocolate Mint Pretzel Bites

In honor of St. Patrick's Day coming up,
I did some baking this weekend!  

First up, white chocolate mint pretzel bites.
Aren't they so cute?



White Chocolate Mint Pretzel Bites
compliments of Shugary Sweets
Prep Time: 1 hour

Yield: 72

Ingredients

1 jar (7oz) marshmallow cream (Fluff)
10 tbsp unsalted butter, softened
1 envelope (0.10oz) Duncan Hines Chocolate Mint frosting creations flavor mix
1-2 tsp milk
5 cup powdered sugar
1 pkg (16oz) vanilla Candiquik (almond bark), melted
1 bag pretzel Snaps (144 pretzels) (I used pretzel twists)
sprinkles

Instructions

In large mixing bowl, beat marshmallow cream with butter and chocolate mint package.  Beat until fully combined (you can substitute 1 tsp peppermint extract and green food coloring if desired).  Add in powdered sugar and mix on medium speed until well blended.  Add milk, one teaspoon at a time, until consistency is correct.  Should come together in one ball, about the consistency of play-doh (it was a little looser for me).

Using about 1 tbsp of filling, roll into balls (I wasn't that patient and just kind of plopped the filling on the pretzels).  Press one ball of mint filling between two pretzel snaps, lightly.  Dip end of pretzels into melted vanilla chocolate, tap excess off on side of bowl.  Add sprinkles immediately and lay on parchment paper lined counter top.  Repeat until all filling is used.  Store at room temperature in a covered container.  ENJOY!

The Duncan Hines frosting creations flavor mix packet was AWESOME!  I wasn't sure what to expect, but I really want to try some of their other flavors!
