Last night we ventured down to Taste of Chicago. We had never been before, but had a good time! Thankfully we were able to go on a week night so it wasn't so crowded...the crowds are usually ridiculous and not something we choose to deal with.
We got to see my best friend's brother while he was working the Smoke Daddy tent. He's such a great kid! Kid, who am I kidding? He's in his early 20's now, but I remember when he was a toddler. He even hooked us up with some free food!
We had quite the variety of food: fudge, steak taco, pot stickers, bbq pork slider, and mini crab cakes...all for $16. Not bad. Jon even ran into the Ocean Spray guys!
There was two more pieces of fudge, but we ate them before I could remember to snap a picture!

Just in time for the 4th!
Can you believe this weekend we will celebrate the 4th of July? Where does the time go?!? We will be heading up to the family cabin in Northern Michigan for a nice long weekend. I can't wait...reading, relaxing, fireworks, maybe some kayaking, campfire, the farmers market, there is so much to do and so little time!
With the campfire comes s'mores! The ooey gooey chocolately goodness...yum! You have to have fresh ingredients...hands down. I only get these about 3 times a year (Memorial Day, 4th of July, and Labor Day) so I want the s'more to taste as best as it can! Usually we end up buying fresh graham crackers each trip. NOT ANYMORE! The geniuses at Nabisco came up with awesome new "Fresh Stacks" packaging. What a fabulous idea! Why did it take this long for someone to come up with this? :) We'll be adding these to our grocery list!

The Weekend, Part 2
Now that you know what we did Thursday and Friday, let's see about Saturday and Sunday!
Saturday we headed to Michigan for the day for Jon's cousin's wedding. Jon's dad and Susan flew in for the wedding. It was a long day in the car, but it was great to see them and catch up with all of Jon's family.
Sunday we were up early hitting the pavement running. I had a 6 mile run for my training and Jon had a 7 mile run for his. After we finished that up, the fun began! Yes, for all of my runner friends running is fun, but it was time to have a different kind of fun!
We went to the Pride Parade and it was such a great time! We have always wanted to go, but every year since we've moved here we have had something on that weekend. So this year we decided we were going to make it work (hence why we only went to Michigan for the day for the wedding). We had an absolute blast! I tried to pick the most PG pictures to post, but let me tell you, you will see everything and anything at the parade!
We had to scoot from the parade a little early so we could get to our next event on time- the Hall & Oates concert at Ravinia!!!! I made a few little appetizers and picked up TJ's Tuscan White Bean Hummus on Jessica's recommendation (LOVE IT) for us to take and we hopped on the Metra to head up to the North Shore. We have never seen the Metra this full- EVER! It was standing room only on the top and bottom! Thank goodness we found seats- it's a lot to stand and hang onto a cooler, mini picnic table, and chairs!
We even had a surprise visitor to enjoy the concert with! My brother-in-law is a bachelor this week and he was able to buy a ticket at the last minute and join us! What a fun night!
So, I'm still pretty wiped out from the weekend's festivities, but they were all so worth it! And, I get to cross off Movies in the Park, Ravinia, and the Pride Parade from my Summer Bucket List!

The Weekend, Part 1
We had such a jam packed weekend that I have to split it into two posts!
Let's start with last Thursday night! We went to Movies in the Park at Churchill Park and saw The Dark Knight. Super appropriate for Chicago because it was filmed here! We grabbed a pizza from Lou Malnati's, a bottle of wine, and cupcakes from more food truck.
Despite the chilly temperatures, the park was packed. At one point the wind picked up and the blow up movie screen fell backwards, but it was quickly fixed (the bottom right picture). I can cross this off of my Summer Bucket List!

Friday evening we had reservations at Frontera Grill. We had a good time, but the food and atmosphere weren't as good as we had hoped. Good, but nothing to go back for (especially when you wait months for a reservation). My "Summer Margarita" was delicious though. It had such a great cucumber flavor!
Before dinner we stopped off at a bar to grab a beer. Jon was asking me about the blog and I realized I haven't posted a picture of the two of us recently so we got out the iPhone for a photo op!

Friday's Fancies - Out on the Town
Tonight we're headed out for a date night! We have reservations at Frontera Grill that we actually scored way back in April...yes, that's how far out they book. I'm excited to head downtown. We don't often go down there for dates because we have so much in our own neighborhood so it's good to get out of the comfort zone.
I'm showing my Chicago love by adding a few pieces from Jess LC in today's collection.

Tomorrow we have a wedding for one of Jon's cousins back in Michigan. It's about a 2.5 hour drive so we are just going for the day and coming back. We get to see his dad and Susan so we're looking forward to that. We haven't seen them since our visit to SLC. Sunday should be tons of fun!! I have a 6 mile run to complete (6 miles...YIKES!), we are going to the Pride Parade, and we are headed to Ravinia to see Hall and Oats for an outdoor concert!!!

I want Wilma's Life
I tell you what, Wilma has a pretty posh life. Yes, her paw is currently injured, but each time we treat it with hydrogen peroxide she gets a treat...not so bad. Last night we took her on a walk and we stumbled upon Fido to Go! near the dog park. What a perfect place for them to park! This is the first time we have ever seen the dog treat truck in Chicago, but how cool is it?!?!
They have everything from sweet potato puffs to yoghund (frozen yogurt for dogs) to the French toast bone that we picked out for Wilma and much more.
And, this is how I found her yesterday afternoon. Really, not a bad life at all.

Hump Day!

I've been trying for the past three hours to upload some pictures here of my breakfast this morning, but blogger isn't cooperating. There is a huge forum going with everyone having issues so if you are like me, you aren't alone! Super frustrating though...I try not to post without pictures so I'm sorry this is so boring today! Hopefully blogger gets this fixed asap!

A few Randoms
- Jon brought these home for me one day last week. :) Just a nice little reminder of how special Jon makes me feel.

- I have a little patient to attend to these days. While we were staying at Jon's grandparent's this weekend, Wilma was hunting for chipmunks in their wood pile. She ended up stepping on a piece of wood that had a rusty nail in it. She split her right back paw open. We called the vet and they told us to wash it out with soap and water and then treat it with hydrogen peroxide. We put a plastic bag with a ponytail holder over her paw when we take her outside. She is learning to milk her injury and of course we can't resist giving her a treat each time we treat it. You can see a tiny bit of her back leg and tail towards the bottom right of the picture below.

Happy Birthday Kate!
Happy Birthday to my awesome sister, Kate! I am so lucky to have her as not only my sister, but my best friend, too! She is one of the most selfless people I know. She is always worried about making everyone else happy. She is a great confidante and always lends an ear to listen. She can be completely goofy and loves her Bon Jovi. Kate was there for me in college when I cried and cried and just wanted to pack it up and head home. She always makes time to enjoy life. Kate is always positive and ready to support you whenever you need it. She works very hard and is always up for an adventure.

Summer Bucket List 2011

One for the History Book!
Yeah, this is the text I got from Jon last night...I will never forget this! :)
Update: The reason is because as we were walking into church last night, one of Jon's friends texted him saying they had an extra ticket to the Mexico vs. Costa Rica soccer football game at Soldier Field...which was about to start. For those of you that don't know Jon, he LOVES soccer. Loves it! We have to have the special cable package so he can get all of his channels. :) So, I told him to go ahead and go! He came into church for a quick prayer and then he was off. Don't worry, I stayed for mass and said an extra prayer for him!

Hometown Lip Dub
I have such pride for my hometown (Rockford, MI) and the area I was fortunate enough to grow up in. A couple of weeks ago, everyone from the community got together and made this awesome lip dub video in downtown Grand Rapids. Roger Ebert even called it "The best music video ever made". How cool is that?!?
It's about 10 minutes, but I really think you'll enjoy it! Rock on GR, rock on!!!

Strawberry Rhubarb Pie
I promised this recipe so here ya go!
Strawberry Rhubarb Lattice Pie
compliments of Martha Stewart Living
For the filling
1 3/4 pounds rhubarb, cut into 3/4 inch thick pieces (6 cups)
6 ounces strawberries, coarsely chopped (1 cup)
1 1/2 cups granulated sugar
1/4 cup cornstarch
1/4 teaspoon finely grated orange zest, plus 1 tablespoon orange juice
1/4 teaspoon salt
Extras
All purpose flour, for surface
2 tablespoons unsalted butter, cut into pieces
1 large egg, lightly beaten, for egg wash
Sanding sugar (optional)
Preheat oven to 375 degrees. Make the filling: mix together rhubarb, strawberries, granulated sugar, cornstarch, zest and juice, and salt. Roll out 1 disk of the crust to a 1/8 inch thickness on a lightly floured surface. Fit dough into a 9 inch pie plate. Pour in filling; dot top with two tablespoons of unsalted butter pieces. Refrigerate while making top crust. Roll remaining disk to a 1/8 inch thickness on a lightly floured surface. Cut into at least fifteen 1/2 inch wide strips using a fluted pastry cutter (or knife like I did). Lay eight strips across pie. Fold back every other strip and lay a horizontal strip across the center of the pie. Unfold the folded strips, then fold back the remaining strips. Lay another horizontal strip across pie. Repeat folding and unfolding strips to weave a lattice pattern. Repeat on remaining side. Trim bottom and top crusts to a 1 inch overhang and press together to seal around edges. Fold edges under and crimp as desired. Refrigerate for 30 minutes (I didn't do this).
Brush crust with egg wash and sprinkle generously with sanding sugar (I used raw sugar). Bake pie on middle rack, with a foil-lined baking sheet on bottom rack to catch juices, until vigorously bubbling in center and the bottom crust is golden, about 1 1/2 hours (Loosely tent with foil after 45 minutes if crust is browning too quickly). Transfer pie to a wire rack and let cool for at least two hours before serving.
Pie can be stored at room temperature for up to two days.

Pulse until mixture holds together when pressed between two fingers (dough should not be wet or sticky). If dough is too dry, add more water, 1 tablespoon at a time and pulse. Shape the dough into two disks and wrap each in plastic wrap. Refrigerate until firm, about 1 hour.

Happy Birthday Wilma!
Today is a very special day for Wilma! It's the day we adopted her and the day we celebrate her birthday. Happy Birthday Ms. Wilma! She is seven today (or so the vet thinks because of her teeth...it's difficult to know for sure because we adopted her). It's also your two year anniversary being part of our family!
Jon found Wilma on the couch last Friday morning while we were packing to head to the cabin. She definitely takes the liberty to make herself comfortable!
One night last week she was relaxing on my legs on the couch and kept shifting her position. I took a picture of each position.
Wilma is such a sweet dog and we are so lucky to have found her. She brings us such joy (even if she did eat my favorite pair of khaki pants :). We are going to celebrate with a nice walk later and some treats!!
