For our dessert at Ravinia I tried a new cookie recipe and it proved to be a hit! It had all of the elements to make the cookies both sweet and salty. I love that combo. In fact, I love having fries with a milkshake...it's so good! If you are a fan of sweet and salty then I'd recommend you whip up a batch of these cookies! It's makes a lot and I put about half of them in my freezer to snack on later.
Peanut Butter Pretzel Cookies
from Pinch of Yum
makes about 36 cookies (I got almost 48)
2 cups cake flour
1 2/3 cups bread flour
1 1/4 teaspoons baking soda
1 1/2 teaspoons baking powder
1 1/2 teaspoons coarse salt
2 1/2 sticks unsalted butter
1 1/4 cups light brown sugar
1 cup plus 2 tablespoons (8 ounces) granulated sugar
2 large eggs
2 teaspoons natural vanilla extract
1 package chocolate chips, 3 handfuls crushed pretzels, 1/2 cup Reese’s Pieces
Sea salt
Sift flours, baking soda, baking powder and salt into a bowl. Set aside.
Cream butter and sugars together until very light. Add eggs, one at a time, mixing well after each addition. Stir in the vanilla. Reduce speed to low, add dry ingredients and mix until just combined. Drop chocolate pieces, crushed pretzels, and Reese’s Pieces in and incorporate them.
Scoop 2-3 tablespoon balls onto a cookie sheet. Bake at 350 for about 7 minutes (I had to bake mine for about 10 minutes). Remove from oven and transfer to a cooling rack. Sprinkle with sea salt (I really think this is an important step that shouldn't be missed).

Top 5 of the Weekend
1. We had dinner and drinks on the patio at Cafe Ba Ba Reeba (a fantastic tapas restaurant in Chicago) Friday night. Love those gift certificates from Santa!
2. Saturday morning we went to Randolph Street Market for the first time. It's a once-a-month vintage and antique market. We had a great time and could have spent quite a bit of moolah!
3. Wilma got a very special treat. After the market we stopped by a butcher shop (hey, we were in the meat packing district for the market so we thought we'd check it out). I'll spare you the pictures of delicious looking ribs, bacon, pork chops (I strongly dislike these), basically any cut of meat you'd want. You pick it out and they'll trim it and cut it for you right there. Jon had a great time. He put gloves on and picked up a pair of fresh pig's feet and had fun with them...I digress. We bought Wilma a smoked pig's tail and she went crazy for it when we got home!
4. The mailman left me a fun package from Luna on Saturday. A headband and free Luna bar! It was for completing the 10k I ran back in July. How nice are the people at Luna?!?
5. Saturday evening we had tickets with my sister and brother-in-law to see Chicago at Ravinia. We had a great spread of food and wine and listened to some classic songs. A few of my favorites: "Love Me Tomorrow", "Saturday in the Park", "Baby, What a Big Surprise", "You're the Inspiration", and "If You Leave Me Now". Don't pretend like you are grooving to them right now...

Friday's Fancies - Wedding Style
Continuing on with the wedding theme of the week, {av} has decided to join Joelle and Jillian and host Friday's Fancies wedding style! I decided to create an outfit for a wedding guest. I love being a guest at weddings- you can just sit back and enjoy the festivities. Waffle Time!
Who doesn't love a good, homemade, warm breakfast? I know I do! It feels so special compared to the cereal I usually eat every morning. I would always love when my mom would make waffles or eggs to dip (yup, that's what I call them. I have to remember they are called eggs over easy when I order them at a restaurant...I had a waitress give me the strangest look when I ordered "eggs to dip" one time) on Sunday mornings when I was growing up. Now she makes them for us when we are all together at the cabin...which we will be over Labor Day weekend! I can't wait!
A couple of weeks ago I had some blueberries to use up and when I came across this recipe on Pinterest (speaking of, what would I do without Pinterest?!) I knew I had to make them.
Blueberry Waffles
adapted from Lick the Bowl Good
Ingredients
1 ¾ cups all-purpose flour
1 Tablespoon sugar
1 Tablespoon baking powder
½ teaspoon salt
8 tablespoons (1 stick) unsalted butter, melted
1 cup milk
½ cup sour cream
3 large eggs
1 ½ cups of fresh or frozen berries (I used blueberries)
Maple syrup or jam, for serving (I used maple syrup)
Directions
Heat your waffle iron. Lightly oil the grids. Meanwhile whisk the flour, sugar, baking powder, and salt in a large bowl to combine and make a well in the center.
If adding berries, add about ¼ cup of the flour to the blueberries and gently mix—this will help prevent the blueberries from sinking to the bottom of the batter.
Whisk the melted butter, milk, sour cream, and eggs in a medium bowl until well combined and pour into the well. Whisk just until smooth; do not over mix. Gently fold the berries into the batter.
Spoon about ¼ cup of the batter into the center of each quadrant of the waffle iron and close the iron. Cook until the waffle is golden brown, 3 to 4 minutes.
Serve the waffles hot, with butter, syrup, and sprinkle with extra berries.
Makes twelve 4-inch waffles.
I would highly recommend eating them outside on your porch or patio (summer is quickly coming to an end so hurry up). That's what we did and I think it made them taste even better!

Destination: Wedding Blog Crawl
We're coming up on our second wedding anniversary this October, but I couldn't resist linking up with cornflake dreams and Love is Home for their Destination: Wedding Blog Crawl. I love a good wedding and wish I could have multiple in my life (to Jon of course). There are so many different themes, colors, options, venues, and locations that I would love to tie the knot at.
I fell in love with Savannah, Ga last fall when we went for our one year anniversary trip. It's gorgeous. Just beautiful. We saw so many weddings in the different squares and I quickly became obsessed.

I Still Smile When I Think About It
Just a little bit of an update with what's been going on the last few days.
My dad sent me his half marathon pictures so of course I have to post them! There are a few pre-race pictures when we were in our corrals waiting to start and one after the finish.
Our neighbor's washer leaked through the ceiling into our apartment AGAIN. I love cleaning up nasty water. I definitely got the bleach out.
And, we topped off our weekend with the last Movie in the Park of the summer- "Despicable Me". We picked up the Sunday special at Piece Pizza & Brewery: a large pizza & growler of your choice for $25. Can't beat it!
We are trying to squeeze every last bit out of summer...are you?

On Monday Fleet Feet offered free engraving of your race medal so of course I had to take mine! My one complaint about the medal is why doesn't it have the year on it? Don't worry, I made sure to put that in the survey I completed over the weekend. I still smile when I think about the race so it's all good! :)
Last week I went to Brookfield Zoo with my sister, Lauren, and Annie. It was a beautiful day and we enjoyed a great picnic lunch, had lots of fun seeing the polar bear swim, and played with all of the fun exhibits.
Thursday night I try a couple new recipes. We had a great dinner of tuna burgers, sauteed green beans, and tomato tart (I used feta instead of goat cheese because I had it on hand). I would highly recommend both recipes!
Sunday we rode our bikes to Lake Michigan and watched the Chicago Air and Water show. I love how loud the F18 & F15 planes were! It's such a rush!
They made a heart!

Friday's Fancies - Back to School
Today's Friday's Fancies theme is "back to school".
Well, my friends...it's been quite sometime since I was a full time student. It's even been 3 years (just this month) since I graduated with my MBA. And, let me tell you, any outfit I wore to my MBA classes was the same outfit I wore to work that day. Those were long days. Work 7am-5:00pm. Head over to campus and study my notes while eating a pb&j and cheez-its for dinner. Class from 6:30-10:00pm. I did that for 2 years, 2-3 days per week depending on the semester. Yikes that was rough, but I made it!
So, today's outfit is a bit more fun and laid back. It's more comfy than dress pants and heels that's for sure! But, it's certainly not an outfit I could afford on a student's budget...let alone mine now!

One Year
Today is the one year anniversary of my blog (and, it's two months until my birthday in case you want to start shopping)! One year ago I sat down and launched The Rest is Still Unwritten... I didn't know what platform to use, what design to use, the right colors to pick...I didn't know anything about blogging except for how to read them. Heck, I still don't know the correct answers to those questions, but now I at least know how to post and upload pictures! :)

Easy Peasy Granola
Everybody likes granola, right? It's great to put on yogurt, mix in oatmeal, snack on by itself, you get the picture.
Well, my sister gave me a great recipe for it and I want to share it with you. It's totally hands off- you make it in the crock pot!
Granola
adapted from A Busy Mom's Slow Cooker Adventures
6 cups Old Fashioned Oats (the giant box from Costco is great for this)
3/4 cup almonds, chopped
1/2 cup pecans, chopped
3/4 cup raw sunflower seeds
1/4 cup flax seed (I didn't have any so I didn't use this)
1 cup craisins
1 cup dried bananas
1 cup apple butter (you find this by the PB&J)
1/4 cup honey
1/4 cup maple syrup
Measure all dry ingredients in a large bowl and stir.

Oh! I remembered I had the real deal for maple syrup so I used that instead of the Hungry Jack.
Mix together the apple butter, honey, and maple syrup.
Spray the crock pot (I have a 6 qt one) with non-stick spray. Dump granola mix in and pour apple butter mixture on top. Mix very well.
Cook on low with the lid vented for 4-6 hours (mine only took 4 hours) stirring frequently. It will get slightly clumpy, but not much.
Isn't that super easy? And, it makes a lot which is great because granola is expensive! You could change out the dried fruit and nut options to try something new if you wanted. Enjoy!

I FINISHED!! :)
Yesterday I ran my very first half marathon and I FINISHED!! I finished, I finished, I finished! And, I can confidently say I had a great experience! That's all I wanted! :)
Here's the low down!
Friday night we went to the Rock 'n' Roll Chicago Half Marathon race expo and picked up our bibs. Both of us changed our corrals. I was in 29 (the very last one) and I moved up to 23. Jon was in 17 and moved up to 6. At the expo I decided I wanted to try and run the half marathon in 2:30 instead of just crossing the finish line. We got ID'd and received our beer bracelets for our after race victory drink. When we got home we picked up the mail and both got good luck cards from Laura & Aaron and my parents. How thoughtful of them!
Saturday we pretty much relaxed around home (by relaxed I mean I was a nervous nelly all day). We got our race gear around (in all of my nervousness, I forgot to take a picture) and packed our gear check bag. We headed to church at 5pm. When we got there an usher asked us if we would bring up the offertory and of course we said yes (I'm pretty sure if you say no that's bad news down the line). However, once we said yes I realized we both had our MGD 64 beer bracelets on! Slightly embarrassing, but God doesn't judge, right? After we brought the gifts up we turned to one another and said hopefully doing this would bring us good luck for the race on Sunday.
We went to dinner right after church as we were planning on having an early night. Of course we had pasta and drank lots of water! We were in bed by 10:15pm.
Sunday morning's alarm at 4:15am came quickly. We got ready and hopped in a cab to head down to Grant Park for the race. Of course we were there before gear check even opened (I'm sure that doesn't surprise those of you that know me). It was nice to be there early when it was still dark and quiet. I just let my thoughts settle in and tried to remember how lucky I was. We watched the sun rise over Lake Michigan and then headed to stretch out.
It was only in the mid 60s for the start of the race. It felt great- especially after training for the last 8 weeks in ridiculously humid temperatures. Jon and I said our "good lucks" and "goodbyes" and we went to our respective corrals. My nerves set back in when we separated- I was now on my own and had my own 13.1 miles to conquer.

It was only in the mid 60s for the start of the race. It felt great- especially after training for the last 8 weeks in ridiculously humid temperatures. Jon and I said our "good lucks" and "goodbyes" and we went to our respective corrals. My nerves set back in when we separated- I was now on my own and had my own 13.1 miles to conquer.
My parents came into town early Sunday morning to cheer us on. They saw both of us at our corrals before the race started. I was really happy to see them before I took off!
And, we were off! I was crossed the start line at about 6:43am. The sun was shinning and I had nothing but 13.1 miles ahead of me. I saw my parents at the 2 mile mark and they made me smile. It started to cloud up around mile 3 (I stopped off here to use the porta potty) and rained on and off for the rest of the race. It started raining quite a bit as I was running through Greek Town and the West Loop. I kept thinking it's fine, it will just cool me off and to keep going. I kept smelling bacon from restaurants and chocolate (there is a chocolate factory in the city). It was torture! At mile 5 I took the GU Energy gel (chocolate flavor) I had in my shorts. When we were running back east on Jackson Blvd the sun came out and was really bright in my eyes, but was welcomed motivation! My knees/IT bands really started to bother me around mile 6. I knew I still had over half of the race to complete and I just had to push through.
Prior to the race Jon and I had discussed two potential meeting points in case he had to stop running (he's training for the Chicago marathon in October and has been having MASSIVE calf and IT band issues for the last month). He has literally been spending hours at night stretching, icing, heating, and working his muscles. When he can't run he's been keeping his cardio up by biking. He wasn't feeling 100% recovered going into the half marathon, but he wanted to try and keep an 8:30 pace to qualify for a corral for the marathon. When I passed our first meeting point (just after the 6 mile mark) and didn't see him I was excited- I really wanted him to do well.
Somehow my parents and I missed each other at mile 7. The stretch from mile 7 to mile 9 was fairly boring. Not much to see in the South Loop. I knew there was a GU Energy gel station at 9 miles (the other meeting point Jon and I had discussed) and I just kept telling myself to get to that point- it helped to break the race up in smaller portions. I got there and grabbed a vanilla bean gel. As I was walking and sucking the gel down, I saw Jon over to the side. My heart dropped for a minute for him, but then I got really excited that I had my husband with me.
Jon said he was in rough shape, but wanted to try to running a bit with me. I told him I'd walk/run the rest of the race with him if he wanted. For the next mile (which had NOTHING to look at) Jon would run ahead and snap pictures of me running. It was the perfect distraction.

At about mile 9.5 Jon said he might have to stop and take a cab back to the finish line. I didn't want him to leave me. At this point I wanted to finish the race with him, but I could tell he wasn't doing well. As he was contemplating pulling off at mile 10, we saw my sister and her family. What a welcomed sight! Kate sprinted (Jon and I said to each other we could have used her energy at that point) ahead to get some pictures of us. We were just smiling and laughing at how hard she was running. She got some great pictures!

Jon told me he was in a ridiculous amount of pain and was going to stop off and catch a ride to the finish line with the Hanson family. I understood, but felt bad for him. I kept saying I'd walk with him to the finish, but he just answered that he knew I worked so hard for this and to keep going and finish strong. It was tough leaving him, but I knew those last 3.1 miles I ran would be for him.
So, I was back on my own. At this point I entered post training schedule distances and just kept praying I could make it (I kept pretending I just started a 5k race and I would be done in no time). About mile 10.5 they had a sponge station and gave out wet sponges to cool yourself off with. It was another really good distraction (remember how I said I broke the race up into smaller increments? Well, these distractions really helped with that). We ran through a tunnel at McCormick Place and as distracting as it was, it was difficult. It was dark and hot. Like really hot. When we came out of the tunnel I saw Soldier Field and knew we were close to the end. When we came back out onto Lake Shore Drive we had a pretty tough hill to run up and it started raining again. Most people around me stopped and walked, but I kept telling myself to finish strong and I kept running. At this point I figured we had to be almost done, but I couldn't see the finish line yet. It was so frustrating.
As we came back into Grant Park I knew we were in the home stretch. At last I saw the finish line!! As I crossed mile 13 I really put it into gear for the last .1 mile. I realize that sounds like a short distance, but after running 13 miles it felt a lot longer than a 10th of a mile. I was so proud of myself for finishing so strong. I hustled, I mean like hauled ass for that last bit. I had a little tear when I finished, but I was also smiling so big! I was on cloud nine! I had successfully completed my first half marathon and the only time I walked was when I was eat a gel or drinking water!!
Yesterday was one of the biggest accomplishments of my life. It ranks up there with marrying Jon, getting my first job at Chrysler, and finishing my MBA.
I had a PR of 2:27:29 and I beat my goal of 2:30!!!!!
I ran this race for my grandma Spindler who passed away from leukemia when I was in middle school. When it got tough running I just kept thinking she battled cancer for years so I can certainly run a half marathon for her. I firmly believe she helped me cross that finish line!
