I have a definite winner in the recipe category today! I made these creamy chicken pockets from Pennies on a Platter and they were perfect for an autumn night. You could even substitute left over turkey from Thanksgiving for the chicken. They were pretty quick to make and you could make the filling ahead of time if you wanted. We had them with a side of mashed sweet potatoes. I mixed some cinnamon, nutmeg, butter, some cream cheese, and a little milk with the sweet potatoes...not the healthiest, but they were delicious!
Creamy Chicken Pockets
adapted from Pennies on a Platter
Yield: 8 pockets, 3-4 servings
2 tbsp olive oil
2-3 small chicken breasts, chopped up pretty small
1/2 cup onion, minced
2 cloves garlic, minced
1/4 teaspoon kosher salt
1/8 teaspoon ground black pepper
1 tablespoon butter, softened
3 ounces cream cheese, softened
2 tablespoons milk
1 (8 ounce) package refrigerated crescent rolls
1 tablespoon butter, melted
Preheat oven to 375˚F.
Heat the olive oil in a large skillet over medium heat. Cook the chicken with the onions and garlic.
Meanwhile, in a medium bowl, beat the cream cheese and 1 tablespoon softened butter until smooth. Stir in the cooked chicken, onions, and garlic. Add the salt, pepper, and milk. Mix well.
Separate the crescent roll dough into the eight triangles. Dollop a tablespoon of filling into the center of each triangle and fold the corners up to seal. Press and seal firmly. Place on ungreased baking sheet or stone and repeat with the remaining dough and filling. Brush the tops with the melted butter.
Bake for 11 – 13 minutes, or until golden brown.
Recipe Notes:
-To heat up leftovers, bake in a preheated 350˚F oven for 10 minutes.
-I used two chicken breasts (from the package from Costco) and I ended up having enough filling to use 2 tubes of crescent rolls.

Monday (way back in October) was my birthday and I was so lucky to be able to celebrate it in Beaune! I don't think I'll ever forget my 29th! We had a relaxing day walking around town and spent the better part of it reading and napping in the park.

My birthday lunch consisted of a cheese pizza, escargot (my first time), and a kir royale to drink!
Jon thought he'd be cute and surprise me with a birthday ride on the carousel in the town square.
We finished the day off with a fantastic seven course dinner complete with duck, scallops, pumpkin soup, pate, chicken, cheese, chocolate cake, and a bottle of champagne.
Before we headed back into Paris on Tuesday, we took one final walk around town and of course Jon met another friend.
Our last picnic of the trip. I fell in love with those Granola cookies. They had the perfect sweetness level.
Unfortunately, the weather was less than ideal when we arrived in Paris. It was cold, windy, and wet. But, we had tickets for the Eiffel Tower later that night and couldn't be more excited! On our way, we found the US Embassy, but the hoards of French policemen surrounding it wouldn't let me take any pictures.
Finally our time had come to head up to the top. It was unreal how high up we were! As you can see from these pictures it was just pouring and freezing, but that didn't stop us from enjoying it.
And with that, our trip to France is complete!

A great holiday weekend!
We had such a fun Thanksgiving weekend. Of course it went by too quickly, but we tried to fit in as much as possible!
Wednesday night my grandma had a cake and ice cream party for Annie's 1st birthday which is coming up this week. My mom, Aunt Deb, and cousin Jake made Annie's banana cake and it was fantastic! She had her own banana to smash!
Thursday we had Thanksgiving on my dad's side of the family and it didn't disappoint! It was so nice to catch up with family. My cousin Sharon made this delicious apple pie (hi Sharon!!!). Doesn't it look like the cover to the Williams Sonoma catalog?
Friday afternoon I shopped with my sister and mom. We didn't get too much, but we had a great day enjoying each other's company. That night Jon and I went out to eat with my parents and we took Jon to The Vestal...a dive bar near their house that he had never been to.
Saturday night my mom made a birthday meal for me. We started off with this dirty martini dip. I have never had anything like it, but it was so good!
The birthday meal: flank steak, venison steak, twice baked potatoes, squash, noodles, salad, and bread with flavored dipping oil. I was so full after this meal, but it was just what I wanted!
We also celebrated my dad's birthday and brother-in-law, Geoff's, birthday. We got these chairs for my dad. He's a huge Detroit Tigers and Grand Valley State University fan.

The ever coveted caramel apple pie. I'm not so much a cake person so this is what my mom makes for me and I was so happy to have some leftovers to bring home!
We ate, shopped, drove all over Michigan, relaxed, and got to see family and friends. We have so much to be thankful for! Another successful holiday weekend for the books!

Friday's Fancies - Black Friday
Black Friday!! Will I be shopping? Yes, I will! But, I'm not going at the crack of dawn...just not worth it to me. :) So, my mom, sister, and I will head out a bit later. I am very much looking forward to it as we don't get to shop together that often.
I knew I wanted a comfy, yet stylish outfit for shopping and I think I found the perfect one. It's actually designed by my friend, Kate. The flats are perfect for walking around and the sweater is key because you don't have to wear a coat! Carrying a coat around the mall while trying to hang onto all of your bags is a pain!
Hope any of you that are shopping found some great deals!

7 facts
A little bit ago Mandee at You Say it Best passed on the Blog on Fire Award to me. I was so excited to get it, but it was also the same day I found out I would be hopping on a plane later that night to head to Germany for an emergency for work. So, sorry it has taken me so long to post this!
I'm supposed to send this award on, but I'm just going to graciously say thank you to Mandee for thinking of me! I love reading her blog and if you are traveling to Portland, OR you should definitely check it out because she has great recommendations!
The rules are I share seven things about me and then I pass the award on!
1. I love cereal and could eat it for multiple meals a day. This happened a lot in college and when I was single and living by myself.
2. I hate when you go to a restaurant and you come out smelling like the place. I just hate smelling like food...it's weird.
3. I can't stand when people talk with their mouth full. Giada de Laurentiis does this all of the time on her show and it drives me nuts.
4. Jon and I debate what color his eyes are all of the time. He says green, but I don't think so. Hazel at best. :)
5. I cried A LOT during 50/50. I just pictured myself in the situation and it totally took over me. You should definitely see the movie.
6. There is a lot going on in our life right now and I pray everyday that we are making the right choices.
7. I have OPI's Suzi Loves Cowboys on my nails right now and I love it!

The ela train
Life has been so crazy around here. Traveling to California, getting ready for Thanksgiving, and many other things. So much going on. I apologize for my lack of posting and commenting on your blogs. The holidays are always stressful and they have begun! :)
Friday night I got home about 9:30pm from Cali. Jon was wonderful and had Jimmy Johns and a glass of wine waiting for me! I was exhausted, but couldn't fall asleep forever because of the 2 hour time difference from California. Wilma was excited to see me, but quickly resumed her post in between two blankets.
Saturday Laura flew in and we went to the coffee shop to get some lunch and catch up. My sister's family came down later on and we all went to the Festival of Lights on Michigan Avenue. We had a great time, but getting home was another story. There was a fire on the red line so it was shut down in both directions and that caused chaos in the el station (or ela as Lauren calls it). She was so excited to be on the ela train! But, we made it home, had dinner, a few drinks, and just hung out.

Friday's Fancies - BFF time!
After a week working in Cali, I'm headed home this afternoon. See you in December, OC. We have some very fun plans this weekend. Laura, my BFF, has a client meeting in Chicago next week so she's coming in early and staying the weekend with us! Fire up for BFF time!
Saturday we are headed down to the Festival of Lights on Michigan Ave with my sister and her family. In the three years we've lived in Chicago we have never made it to this festival, but have always wanted to go. I can't wait! I'm really starting to get into the holiday spirit. Sunday will be relaxing; hence this week's Friday's Fancies outfit. When Laura and I lived together we had a Sunday night ritual of watching Desperate Housewives and drinking chai tea. Bring it on for Sunday evening!

L & A - simply the best
We had such a fun Saturday night babysitting Lauren & Annie. Annie was crawling all over (I didn't get a picture of her before she went to bed...sorry sweetie) and was happy to be back with her friend, Wilma. Lauren, Uncle Jon, and I had a special movie time and watched Cinderella.
We are so blessed to have the girls in our life. I never knew what being an aunt would be like, but I certainly enjoy the title and all that comes with the job.
That's how to spend a Saturday night!

Friday's Fancies - Golden Anniversary
In honor of {av}'s 50th week of hosting Friday's Fancies, she picked golden anniversary as this week's theme. I will admit a few years ago I wanted nothing to do with gold. I didn't like it at all, but now I absolutely love it. Especially for special occasions like the holidays! This week I tried to create a fun, but elegant look.

On Sunday we spent the day riding bikes through the vineyards. It was a glorious 18 miles! The vineyards had a golden, red color to them and they went on forever and ever. The weather was great and we didn't have a complaint in the world!

We thought we were clever with putting our baguette on Jon's bike rack.
We had another picnic lunch complete with a bottle of wine made from the grapes in the field surrounding us.
This hill proved to be too much for me. Maybe it was the elevation, maybe it was the wine...
We made sure to take some time and relax in the vineyard...well, Jon took a little snooze. :)
It was definitely one of our favorite days of our vacation!

Weekend Recap
How is it Monday already?!?! We had a really nice weekend. We had time for some much needed relaxation after both of us traveled for work last week. I went to Germany and Jon was in North Carolina.
Friday night we broke out our new panini press (thanks Aunt Deb!) and had salami paninis, my homemade version of Mrs. Grass soup, and some Screamin' Pumpkin Spiced Ale. Definitely good comfort food after being on the road.
Sunday night I made Butternut Squash Risotto for dinner. It is always such a tasty recipe!

Saturday Kate, Lauren, and I went to see Pinkalicious and had lunch on Michigan Avenue. It was a beautiful day and we had a great time together.
Geoff, Kate, Jon, and I went to dinner at Cafe Ba Ba Reeba later that night to celebrate my birthday. We ate too many tasty tapas and the guys had wine and Kate and I shared a pitcher of sangria. My parents were supposed to come in for the weekend, but my dad injured himself while hunting and he's on crutches so he didn't want to travel. We'll have to celebrate with them later.
Sunday morning we were up bright and early because of the time change. Each year I love this day because I get so much done! That extra hour is fabulous! We went to 8:00am church (I'm positive that's Jon's first time at 8:00am mass) and then stopped by the coffee shop to read the paper and get some drinks.
